Ok I am a fan of organic foods and organic farmers however growing up in a non-organic world how do you ensure you are buying fresh organic produce.  From my COOP to Whole Foods, my organic fruits and veggies will spoil faster which has created a new habit of shopping more often for less food but do any of you have tricks to keeping organic foods fresher, longer.

That's a good question. I too would like to read people's replies. The only thing I can contribute is... can it. I recently found about 50 Mason jars at a Goodwill for $5.00. The lids I had to buy from Safeway (which were pretty expensive, but it's an investment as I can use them again). I've inherited a pressure canner from my folks and bought a replacement gasket from pressurecooker-outlet.com.

It's true that this process is time consuming and requires your constant attention, but I made a family weekend out of it, so it was quite enjoyable. We now have 6 jars of pasta sauce, 12 jars of zucchini and yellow squash, 11 cans of corn, 3 jars of grapefruit marmalade, 6 jars of peaches, 5 jars of cucumber dip and 5 jars of pumpkin pie filling. All organic. We lost 2 jars in the process. :(

Anyway... I've not yet tried any of my concoctions yet (I'm still gloating over the fact that I did this) but I have tried some of my parent's 28 year old pickles.. and they were superb! I be interested in swapping recipes if anyone is interested

I've been thinking about canning as part of my effort to eat more locally, but my cooking/food prep background is very limited (my Mom was an early and ardent microwave devotee). Is canning difficult? Can you recommend an instructional book or website?
